Hummus Chicken Salad
Simple lunch or dinner option! Pair with a whole wheat wrap, lettuce wrap, or some brown rice and you have a solid meal!

Ingredients
- 1 lb. shredded chicken you can use a rotisserie chicken and take off the skin (use our easy crockpot chicken recipe!)
- .5 cup hummus
- 1/4 cup cucumber
- 1/4 cup cherry tomatoes cut tomatoes in half
- 2 tbs. sliced black olives
- 1 tbs. freshly chopped chives
Instructions
- Combine all ingredients together in a large bowl
- Will last 5-6 days in airtight container
